Chef Dale asks..Did you know you could make
hard boiled eggs in the oven?

Set eggs on rack and bake 25 minutes
at 325 degrees.
Shock in cold water immediately after baking.

Jimmy’s of Chicago opened for business on December 19, 2008. Owners, Kerry and Zalena Kersting wanted to bring to Gilbert, AZ the great Italian food they grew up on back in the Midwest. Kerry is originally from St. Louis, MO and came to the Phoenix area in 1975. Zalena (maiden name Moccio) met Kerry when she came to Arizona for college, leaving behind her Chicago home and its great food.

Zalena’s family has been in the restaurant business in the Chicago area for over 20 years.
Her sister (Frem) and brother-in-law (Jim – what a surprise) are the owners of Jimmy’s Place on Madison Street in Forest Park, IL. Jimmy’s Place has been a hangout for locals for the last 10 plus years. It serves great food and has a historical ambiance and feel.

TIPS FROM CHEF DALE:

1. When making cinnamon or sticky buns use
brown sugar instead of white sugar.

2. Drizzle lemon juice on cut up
apple slices to keep them from turning brown.
Especially when using them in pies and applesauce.

3. When cooking carrots use a little 7Up and brown sugar.

4. Honey never spoils.

5. The use of garlic and the oil of oregano is extremely healthy for you.

Popcorn comes in 2 kernel types. Mushroom and Butterfly. The mushroom kernels are larger and rounder; the butterfly displays a free form. The mushroom kernel pops larger.
